Thai food cravings- chicken noodle soup


After visiting Thaiyashi on Dean Street in Newlands with a friend of mine this week, I had such a major Thai food craving that I decided to make one of my favourite, super delicious, wholesome Asian food dishes: chicken noodle soup!









Ingredients:

(all amounts are relative to how large of a portion you want to make)


  • Chicken breasts (boneless)

  • Egg noodles

  • Mushrooms

  • Carrots

  • Onion

  • Frozen peas

  • Baby spinach

  • Fresh ginger

  • Garlic and ginger paste

  • Oyster sauce

  • Soya sauce

  • Honey/ sugar

  • Lemon juice/ lemon zest

  • Salt/ pepper for taste



Method:

(the easy bit dont worry)


  1. Cut your chicken into cubes and add to an oiled pan (the chicken should sizzle once added...this will show that the oil is hot enough)

  2. Add water to the chicken to steam cook/ boil it (top pan with a lid)

  3. Cut up your carrots, onions and mushrooms and ginger

  4. In a separate pot, bring water to the boil and add the onions, carrots, frozen peas and some of the ginger

  5. In a mixing bowl: add soya sauce and oyster sauce (equal parts), mix together with a squeeze of honey, some salt and pepper, diced ginger, some ginger and garlic paste, and a squirt of lemon juice/ some lemon zest. Mix well

  6. Once the vegetables and chicken are done remove off heat

  7. Take the soya sauce mixture and add to the chicken - combine well

  8. Strain off the vegetables, but SAVE THE STOCK

  9. Place the pot with the stock back on the heat and add your egg noodles (rice noodles would also be good here!). Add extra water to make sure the eggs noodles are slightly submerged

  10. Once noodles are soft, add the vegetables and the chicken mixture combined in the sauce

  11. Stir well

  12. Add more of the ingredients that went into the sauce as you wish (personal preference)

  13. Serve with fresh baby spinach and top with a fried egg!
